Individual Cocoa Soufflé Cakes-YUM
I LOVE chocolate!! Especially Chocolate souffle….however it’s not the best thing to be ingesting. I was inspired by Jen ComasKeck and her blog on healthy brownies (click here to see her recipe and check out her blog) to try and healhy this up. This was my first attempt and it came out pretty damn good. If anyone knows a better way comment below!!
Ingredients:
Cooking spray
6 Packets Stevia (or your choice of sweetner-I used equal since it was all I had), divided
1 tablespoon coconut flour
1 1/2 tablespoons unsweetened cocoa
6 tablespoons coconut milk creamer
2 large egg white
Preparation
Preheat oven to 350°.
Coat 2 (6-ounce) ramekins with cooking spray.
Combine 2 tablespoons Stevia, flour, cocoa, and milk in a small saucepan over medium heat. Cook 2 minutes, stirring until smooth (I suggest tasting it and adding additional sweetner to your liking-if it doesn’t taste sweet in the pan it will not be sweet when its cooked). Spoon chocolate mixture into a medium bowl; cool about 4 minutes.
Place egg white in a medium bowl; beat with a mixer at high speed until soft peaks form. Add remaining 2 packets of stevia, again add to taste, beating until stiff peaks form (do not overbeat). Gently stir 1/4 of egg white mixture into chocolate mixture; gently fold in remaining egg white mixture. Spoon mixture into prepared dishes. Sharply tap dishes 2 or 3 times to level. Place dishes on a baking sheet; bake at 350° for 15 minutes or until puffy and set. (do NOT overcook-souffle is supposed to be soft in the center. Served best with WHIP Cream….but bein as this is supposed to be healthier version I suppose you could substitue with a spoonful of almond or coconut ice cream!
Serve immediately. or they will IMPLODE
